  • 4 Duck Breast
  • cup butter
  • cup Sherry
  • 2 can Consomme
  • ½ cup Bourbon
  • 5 oz Currant Jelly
  • 4 tbsp worcestershire sauce


  • Boil duck covered in consomme for 2 hours.
  • Bone duck, and put in a casserole.
  • In a saucepan, heat butter, sherry, bourbon, Currant jelly and Worcestershire sauce. Pour sauce over meat.


This recipe is too rich to serve as a main dish; serve it with toothpicks as an appetizer.
