  • Conventional Oven

Ingredients
  

  • 3 cup sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2 cup sweet potatoes cooked, mashed
  • cup all-purpose flour
  • 2 tsp baking soda
  • 1 tsp allspice
  • 1 cup raisins
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 cup pecans chopped
  • 1 tsp butter

Instructions
 

  • Preheat oven to 350°
  • Sift all dry ingredients together, and set aside.
  • Cream sugar and oil; add eggs and potatoes, and then add dry ingredients. Mix well.
  • Divide batter between two 9x5x3 loaf pans that have been greased and floured.
  • Bake for 55-60 minutes. Cool, then remove from pans.
