Patio Beef with Rice

  • 1 lb ground beef
  • 1 cup onion chopped
  • 1 green bell pepper chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 1⅓ cup rice
  • 4 cup tomatoes
  • 1 cup water
  • 2 cup cheddar cheese shredded
  • 1 can olives black, sliced, optional


  • Brown ground beef with onion and bell pepper. Cook until onion is transparent. Drain excess meat drippings.
  • Stir in salt and pepper. Push mixture to sides of skillet forming a well. Pour rice into well and flatten. Cover rice with Tomatoes and water. DO NOT STIR. Bring to boil.
  • Reduce heat and cover with lid. Cook for 30 minutes at lowest heat. Stir in half of the cheese and top with remaining cheese and black olives if desired.
