Equipment

  • Conventional Oven

Ingredients
  

  • 2 cup corn meal
  • 1 tsp salt
  • 2 cup milk
  • ¼ cup Crisco shortening
  • ½ lb bacon cooked and crumbled
  • 1 Onion chopped
  • ½ cup jalapeno peppers minced
  • 2 cup all-purpose flour
  • 1 tbsp baking soda
  • 1 tbsp sugar
  • 3 Egg beaten
  • 1 cup whole kernel corn
  • ½ cup Cheddar Cheese grated

Instructions
 

  • Preheat oven to 350°
  • Mix ingredients except grated cheese.
  • Grease pan and pour in half the batter. Sprinkle with half the cheese.
  • Pour in the rest of the batter and top with remaining cheese.
  • Bake for 45 minutes.
