Mexican Cornbread #5

- Conventional Oven
Ingredients
- 2 cup corn meal
- 1 tsp salt
- 2 cup milk
- ¼ cup Crisco shortening
- ½ lb bacon cooked and crumbled
- 1 Onion chopped
- ½ cup jalapeno peppers minced
- 2 cup all-purpose flour
- 1 tbsp baking soda
- 1 tbsp sugar
- 3 Egg beaten
- 1 cup whole kernel corn
- ½ cup Cheddar Cheese grated
Instructions
- Preheat oven to 350°
- Mix ingredients except grated cheese.
- Grease pan and pour in half the batter. Sprinkle with half the cheese.
- Pour in the rest of the batter and top with remaining cheese.
- Bake for 45 minutes.
