Mexican Cornbread #4

- Conventional Oven
Ingredients
- 1 cup corn meal mix
- ½ cup oil
- 1 cup cream corn
- ¼ tsp salt
- ½ tsp baking soda
- 1 cup buttermilk
- 1 Onion chopped
- 1 cup Cheddar Cheese grated
- 3 jalapeno peppers minced
- 2 Egg beaten
Instructions
- Preheat oven to 350°
- Mix soda with buttermilk. Add other ingredients except 1/2 cup grated cheese.
- Mix well and pour into pan.
- Top with remaining cheese.
- Bake for 35 minutes.
