Equipment

  • Conventional Oven

Ingredients
  

  • 1 cup corn meal mix
  • ½ cup oil
  • 1 cup cream corn
  • ¼ tsp salt
  • ½ tsp baking soda
  • 1 cup buttermilk
  • 1 Onion chopped
  • 1 cup Cheddar Cheese grated
  • 3 jalapeno peppers minced
  • 2 Egg beaten

Instructions
 

  • Preheat oven to 350°
  • Mix soda with buttermilk. Add other ingredients except 1/2 cup grated cheese.
  • Mix well and pour into pan.
  • Top with remaining cheese.
  • Bake for 35 minutes.
