Loin with Bacon Garlic and Rosemary

  • Conventional Oven


  • 3 lb pork loin roast boneless
  • 4 pc Bacon
  • 2 tsp garlic
  • 1 tsp rosemary
  • salt to taste
  • black pepper to taste


  • Preheat oven to 250
  • Chop bacon; mince garlic; and crush rosemary. Combine together.
  • Cut pork loin lengthwise almost all the way through the middle leaving 1/4 inch uncut along one side. Open and sprinkle with salt and pepper. Spread bacon mixture over cut surface of meat. Close and tie. Sprinkle outside with salt and pepper. Wrap in foil and place in pan.
  • Cook for 3-4 hours.
