Date/Fruit Nut Loaf
- Conventional Oven
- 1¾ cups nuts whole
- 13 oz dates Whole, or substitute raisins, red cherries, etc.
- ¾ cup all-purpose flour
- 2 tbsp baking powder
- 2 Eggs separated
- ½ cup sugar
- 1 tsp vanilla
- Preheat the oven to 325.
- Mix together all ingredients except egg whites.
- Beat egg whites until stiff. Fold into batter. Batter will be stiff.
- Press into loaf pan.
- Bake for 1 hour. Cool before slicing.
NOTE: This is a hard loaf, but it is very good. Use a sharp knife to slice it.
